Italian Vegetables

4 T butter
2-3 T olive oil (or use mostly oil by switching quantities)
8 C mixed Italian squash, cut 1/4" thick in rounds, halves, and quarter rounds
2 T Italian Seasoning (Kroger brand is good, Ralph's/Fry's)
1 t+ Salt
1.5t+ Fresh ground pepper
Heat the fats over medium heat. Add in the squash Italian seasoning, and some salt & pepper. Toss frequently until the squash is just starting to become tender, about 8 minutes. Cover, reducing heat slightly, and steam for 5 minutes, tossing once during the process. Add the tomatoes and steam a bit more, depending on how done you like them. Add more salt and pepper to taste.
