1 lb dried black beans
1 T salt
8 cups water

3 bay leaves
5 cups water

Rinse 1 lb black beans, and then add enough water to cover by 2” in a wide pot plus 1T salt. Soak overnight, or at least 6 hours.  Discard the soaking water and rinse again.  Place the beans, 3 bay leaves, and 5 cups of water in the Foodi.  Pressure cook for 5 minutes, and natural release for 15 minutes.

Optionally take the now cooked beans and their cooking liquid and place in a wide bottomed pot. Add 

1 T cumin
1 T oregano
1/4 t 3 pepper powder
1/2 t truffle salt
2 T apple cider vinegar

Cook them down until they reach the desired thickness.  Taste test for salt acid heat balance and adjust if necessary.
