Sweet & Sour Pork

2 lb Pork (used Loin, but others may be good also)
Olive Oil
1/2 C Waterfront Bistro hot cocktail sauce
1/3 C rice wine vinegar
2 t ground ginger
1T molasses
1T brown sugar splenda
1T double concentrated tomato paste
1/2 t truffle salt
1T tamari (gluten free)
1/8 t truffle powder
8 oz can pineapple chunks (drained with juice reserved)
(Various Vegetables of choice)
California mixed veggies
Peas and Carrots
Asian Vegetables
Water Chestnuts
Cut pork into 1in cubes
Brown in olive oil over high heat
Set aside pork
Brown pineapple chunks in the same pan (to caramelize)
Assemble sauce ingredients,, bring to simmer, taste and adjust
When sauce is good, combine with pork and pineapple
Simmer until veggies are done.
