Buffalo Chicken Dip
This makes a huge amount for a party (3 largish ramekins' worth, or other microwavable dish). It could easily be scaled down, as precise measuring of ingredients is not crucial.
16oz cream cheese, softened (2 blocks)
3/4 C Greek yogurt
1 1/2 T Ranch Dip seasoning (see dips recipes, just use the spices)
1 tsp truffle salt
1/3 C Noble Made Medium Buffalo sauce (for “warm,” add more for hot, to taste)
3/4 C feta or blue cheese crumbles, chopped fine
2 C smoked chicken (or just shredded chicken), chopped fine (a little less than 1 lb)
1/4 tsp liquid smoke, if not using already smoked chicken
Place the cream cheese in a large microwavable bowl and soften in 30 second increments until soft, stirring between each interval. Add the yogurt, spices, and buffalo sauce and stir well to incorporate. Add the cheese crumbles, chopped chicken, and liquid smoke if using. Stir well and scoop into serving dishes that can be reheated later if making ahead. Heat to warm before serving, and serve with celery sticks, carrot sticks, and/or corn tortilla chips.
I don’t know if this would freeze well, but it might.
