Chocolate covered bacon
Thick cut bacon
Dove dark chocolate
Kosher salt
Spray the cooking sheet (or better, drying rack sitting inside a pan with aluminum foil under it), with something non-stick! If you forget to do this, you will have very hard time getting the bacon up, once it's cooked.
Cook bacon in oven at 350, past stage where grease has fried out, until grease is gone completely. This takes about an hour, maybe a little less. You want it very well done. Check it at 30 minutes.
If you're doing two trays at once, don't forget to turn them and exchange racks at the midway mark.
Meanwhile slowly melt chocolate in a double boiler, or in the microwave slowly, stirring after every 30 secs or so . Use a large pan for holding the chocolate, so there will be a large surface area for dipping the bacon.
When removing the bacon from the oven, if you made the mistake of not spraying any non-stick on the surface under the bacon, then use a spatula and free the bacon from the surface beneath immediately after removing it from the oven. If you want to cut the bacon into smaller pieces, do that using scissors immediately after removing it from the oven. It becomes very brittle afterward. Let the bacon cool.
Dip each piece into the chocolate (both sides) and place onto a plate.
Sprinkle a small amount of kosher salt over each piece.
Once all pieces are dipped and salted, place on top of waxed paper, on a cookie sheet, and place into freezer until hard.
